Kale Salad

Kale in DrainerHave you ever wondered what to do with kale? Tonight I had my latest batch of dinosaur kale draining and loved how it looked against the red tiles with the yellow juicer in the dish drainer . . . and it’s as good to eat as it is interesting to look at. So here’s my absolute favorite kale recipe:

Kale Salad

  • 1 bunch of dinosaur kale (or any other variety)
  • 1 clove garlic
  • 1 carrot grated
  • purple onion or Vidalia sweet onion chopped
  • (as much or as little as you like)
  • 1 to 2 tbs Wheat Free Tamari
  • 3 tbs olive oil
  • juice from 1/2 Meyer lemon

Roll the whole bunch of kale into a big “cigar,” then slice off very thin slices down to the stems at the bottom. Grate the carrot into the bowl with kale, chop up the amount of onion you like in salad, add it and the pressed garlic to the bowl, then add the dressing ingredients: tamari, olive oil and lemon juice. Now here’s the fun part: toss the whole batch, then start grabbing handfuls and squeezing it. Do that until the whole batch has been reduced in size by roughly 1/3, which will take about a minute or two. Let it stand for a little while until the flavors marry (maybe 15 min. to 1/2 hour). Have some!

You’ll be amazed that a vegetable that could be used, in a pinch, for roof tiles can get so soft and flavorful. And it’s raw!
